I am not a foodie. I never have been. I eat what tastes good, what is easy, what is fast, probably what is bad for me because that’s how it always was growing up. If it looked pretty, it probably tasted bad. If it looked kinda icky, breaded and fried, covered in gravy, served over white rice… mmmmmmmm. That meant it was one of grandma’s recipes and it would taste really good, even if it shortened your life by a couple of days. What’s a couple of days, anyhow? The ones at the end are probably going to be my worst anyhow.
Lately though, I have to think a bit more about what I’m eating. Aside from the fact that my knee high boots from last season now completely cut off the circulation in my legs (how do you target the weight gain in your calves???), I’m a year off 40, and it’s also helpful in controlling the seasonal symptoms I have been having of late, I really do enjoy cooking. I don’t exactly get into creating recipes because I don’t quite understand the chemistry of food and how the different ingredients work together for flavor or for chemical reaction such as leavening. I mean, I have a minor grasp of the concept, but no lasting knowledge even though I did take cooking in college. Oh yes I did. Home Economics was major number 3 of a million and one.
Regardless, I have been getting way into cooking and baking again lately. Let me show you why. First there was this, and then there was this, and this, and definitely this, and this… and I am completely hooked on the cooking that other people are doing. I have been making other people’s recipes like they’re going out of style. And let me tell you, each and every one of these geniuses have put their foot in it! I may not cook anything of my own that is pretty enough to photograph, but I’m feeding my family some seriously delicious stuff, and I’m getting them involved in the process. We’re eating healthy food that we’ve prepared ourselves and we know exactly what’s in it. I have been completely inspired, and my roomies aren’t exactly complaining.
Becky that is awesome! How has everything turned out? Did you like the chocolate cake? Was it moist? Those zucchini muffins looked really good. Glad it is all going over well.

The cake was AMAZING and very moist. Everyone loved it. I even figured out how to make the vanilla bean whipped cream for the topping, which was also served over berries!! I’m really finding some excellent recipes on these blogs, including yours!
